カラスミの発祥地はイタリアと中国。日本へは中国から伝来。イタリア料理ではカラスミ(ボッタルガ)をパスタに入れたり、サラダやピザのトッピングに使用します。豪州はボラやサワラが沢山獲れるので、良質のカラスミを生産。日本製や台湾製は油脂が多く、汚染も気になります。

The birthplace of botargo is Italy and China. It was introduced to Japan from China. Italian chef uses to add into pasta or to put it on salad or pizza. As lots of mullets and Spanish mackerels are caught in Australia they produce high quality botargo. The products from Japan or Taiwan contain a lot of fats and oil. Also I’m worried about contamination.
