Such as the eskimos have many words for snow, just like American people are fond of lots of type of meat, like the Japanese have many words for seaweed. And for those people on the other side of the pacific, the lack of words for seaweed should be problematic.
It is very confusing when reading the translated English ingredients for nori, iwanori, wakame and kombu since they all say "seaweed." Totally different foods with totally different applications.
Iwanori literally means "rock seaweed" because it is found in the crevices of rocks. It's very soft and delicate - almost like dried out lace. It's excellent to sprinkle on pasta, soba and ramen. Iwanori is much more aromatic than nori which is probably the type of seaweed that people see the most in forean countries. If being crazy about rolls. then must be crazy about nori too.
Iwanori ramen (Ramen with pork bone broth and soy sauce based soup served with seaweed flakes)'s so special is how its unprocessed seaweed all over on top of the noodle looks impressive.
