厚岸調査でのエピソード。

大学院生のAさんが、「チシマフウロ、綺麗ですね」と。そうですね。愛らしい花ですが、北の厳しい気候の中、この時期に花を咲かせています。

 

思わず、パチリ。

ちなみに、先週登った徳舜瞥山の山頂では、より薄めの紫色の花。

この季節、北のフィールドに出かけるのも良し。

29年ぶりの厚岸臨海実験所（北大の研究教育施設）。あの頃、厚岸に再訪することなんて、夢にも思いませんでした。

札幌から車で７時間かけてようやく到着。長い道のりでした。

 

今回の調査に際し、フィールドステーションの仲岡先生はじめ、技術職員の皆様にお世話になり、感謝いたします。

日本の南極観測隊で野外調査が主たる任務であった隊員にとって、「なめたけ」は思い出深いおかずである。配給された瓶詰め「なめたけ」をご飯にかけて、胃の中に入れる。時に、お湯をかけて、お茶漬け風にしてさらっと頂く。こんな食事が毎日続く。贅沢な話なのだが、日本に戻ってから、遠慮したいおかずの一つとなってしまう。

 

先日、登山の帰りに「きのこ王国」に立ち寄る。ここでは、数えきれない程多様な味の「なめたけ」を販売している。その中から、「生姜なめたけ」、「焼きにんにくなめたけ」、「鰹なめたけ」の３本を購入（３本で1,000円）。これらをどのようにいかそうか？

 

そこで、思いついたのが、冷や奴に「生姜なめたけ」をのせた「朝のダイエット食」。これならば、短時間でできて、しかも、ヘルシー。野菜ジュースと一緒に摂れば、なお良し。

徳舜瞥山とか行ってきた。

どうもお腹回りに内蔵脂肪が増加傾向。その健康的燃焼のため、道央（北海道の中央地域のこと）にある徳舜瞥山（とくしゅんべつ）へ軽登山トレッキング。研究と関連しないプライベートな登山は久しぶり。

頂上到着。1309m。晴れていれば、すばらしい眺望のはずなのに、ガスがかかり、さらに、風強し。

山ガールの皆さんと昼食。北海道名物ホットシェフのおにぎり。身体を温めるために、お味噌汁とともに頂く。

ホロホロ山まで縦走を予定していたが、強風のため断念。頂上の花々に未練をたっぷり残し、やむなく下山。

下山後体重測定。100グラムの減量。うーむ、メタボ解消への道遠し。

達成感

悩み苦しみ、もがきながらも、努力し続けて、あることを成し遂げることができたのなら、大きな達成感を味わえるもの。特に、フィールドを主体とした科学研究には忍耐を要する。

 

達成感の大小はとりあえずおいておくとして、めでたく「my箸会員」へ。80食のランチは、長い道のりであった。ちなみに、ラストはあぶらこのオレンジソースがけ。和なんだけど洋、洋なんだけどやはり和という贅沢な逸品。ささやかだが、食べていけていることに感謝。

さて、先日、フランクフルトで開催された女子サッカーW杯。なでしこジャパンの快進撃は感動ものでしたね。試合後の澤選手らのインタビュー映像を観ていて気になったのが、背面ボードのスポンサーのロゴマーク。VISAとかのワールドワイドな企業にまじって「REWE（レーヴェ）」が何気に主張しています。

 

「REWE」は、ドイツ国内にあるチェーンストア。リーズナブルな値段で食料品や日用品が買え、ドイツ出張の際はずいぶんとお世話になるお店です。時々、「アクションプライス」と銘打って、大安振りをすることがあります。例えば、500グラムのコーヒー豆が、3.99ユーロ（500円）だったり。

 

で、爽やかな澤選手のインタビュー映像を眺めなら、ふと思ったのですが、なぜREWEがグローバル企業の仲間入りをしているのだろう？と。

 

少しだけググって調べてみました。「REWE」は、ドイツ国内にスーパーマーケット3000店舗あり、「REWE Group」全体で、ヨーロッパ内１４カ国に11,889店舗もあるらしい（従業員は、325,000人以上）。

隣の研究室の方に教えて頂いたのですが、北海道限定の食品と言うのがいろいろと存在するとのことです。その代表格は、「やきそば弁当」。いわゆるカップ焼きそばなのですが、北海道限定品は湯がき用のお湯で粉末スープを溶かしてカップスープにできます。残りのお湯はもちろん湯切り口から捨てるのですが。

 

さて、海外出張で困ることの一つ。どこで食事をするかです。特に、一人で行動していると、雪国出身の悲しい性か、レストランに入ることが億劫です。宿泊しているホテルが中心街から離れている場合は尚更です。こうしたケースを想定して、サバイバルフードを携行することにしています。普段は食べないのですが、カップラーメン。加えて、ビスケット、せんべい、あさげ、緑茶ティーバックなどです。これらさえあれば、何とかなります。

 

ある時、北海道限定の「やきそば弁当」を持参すること。湧かした湯500mlを乾燥かやくを加えたカップ麺に注ぎ、待つこと３分間。湯切り口から150mlをカップスープに。残りを洗面台へ流し捨てる。そうそう、湯切り口の小さな３つの穴からはゆっくりと広がりながら湯が流れ出るのですね。

できあがった捨て湯で作ったスープとやきそば。３分もせずに無くなります。容器に残ったソースなどは、トイレットペーパーで拭き取り、ゴミ箱へ。

 

食後、ゆっくりと緑茶を楽しみながら、翌日のアジェンダを考える。おっと、うがいを忘れてしまった。イソジンを水で20倍希釈して、ゴロゴロッとうがい。そして、洗面台へ流す。すると洗面台が紫色に変化。

 

は、はーん。洗面台表面上で、ヨウ素でんぷん反応が生じたんですね。カップ麺捨て湯に含まれているでんぷんが洗面台に固化して残ったのですね。カップ麺由来のでんぷんのらせん構造内部にヨウ素が入り込んで呈色。

 

この「ヨウ素でんぷん反応」は、初等理科からおなじみの現象です。大学では、１年生の基礎実験等で学ぶ「中和滴定」でも。我が研究室に入ってからも、水中の溶存酸素濃度を測定するためのウィンクラー法で「ヨウ素でんぷん反応」のお世話になります。さらに、硫化水素測定のための標準溶液の検定にも、この反応を利用しています。

７月８日付けの朝日新聞朝刊「教育欄」に、松浦克美教授が取り組んでいる「意欲ある学生を選ぶためのゼミナール入試」（大学入試）が紹介されている。一般入試とは別に、講義と実験、そして演習を通して入学者を選抜しようというもの。学科試験ではかれない意欲や適正を評価するアドミッション・オフィス入試（AO入試）である。これは、とても手間ひまのかかる入試だが、入学後のミスマッチを軽減する上でも効果的。

 

この記事で、松浦教授は以下のことを語っている。

 

「受験テクニックが上がり、一般入試は理解しなくても点数が取れるという指摘もある。９日間ゼミをやれば、どれだけ対策しても、学生の意欲や能力がわかる。AOを広げていきたい」

成田から札幌への国内線乗り継ぎゲートにて、歩センセイにばったり。互いに国際会議の概要を報告。そして、新千歳空港までご一緒することに。
