Hiroshima-yaki

Special okonomiyaki 'Hiroshima-yaki' is one of japanese pancake with lots of cabbage, noddle, pork, and eggs.
Hiroshima style Okonomiyaki, (Hiroshima-yaki ) has a layer of yakisoba noodles.  The difference from Osaka Style Okonomiyaki is the Osaka style mix the ingredients (or at least, the cabbage) together into the batter, while the Hiroshima-yaki, add each ingredient separately in the layers.

When it comes to Japanese foods, probably  sushi, ramen, udon should be remembered. But wants to dig a little deeper, it's time for soul food. Okonomiyaki.
Okonomiyaki is a flour based mixture cooked on a griddle. Thus a cake from a pan, or "pancake." But it doesn't have the sweetness of fluffiness the name connotes.
   
Okonomiyaki is a special part of the culture in the Kansai region of Japan. So much so, that they think of it in special ways. Even though it is packed full of carbs, citizens of Kansai consider it goes with rice. In this case, carbs with carbs. People from other parts of Japan think this is weird.

You can enjoy this dish at okonomiyaki restaurants throughout Japan. There are usually 3 dining options for these restaurants:

1) You can sit at a counter in front of a huge teppan where the chefs make them right in front of you.

2) You can sit at a table which has built in teppan, you can cook your own but the staff will help you make it if you ask.

3) The okonomiyaki is prepared and made in the kitchen and they place it on a teppan in front of you to keep it warm.

The taste of the okonomiyaki strongly relies on the sauce. I love Otafuku brand’s Okonomi Sauce;  which is able to get from Amazon or Japanese grocery stores.
