ごまめ(田作り)
田作りは、魚が沢山とれた頃、猫またぎの魚として、鰯等を畑の肥料にし
た事から、田作りと呼んだとか、五穀豊穣を祝い正月に頂く祝儀魚です。
①フライパンを温め、ごまめ60gを入れ焦がさないようにゆっくり煎り、固くなれば紙に広げ冷ます。
②鍋に砂糖大匙3杯・醤油大匙3杯・酒大匙1杯を入れ、弱火で煮詰め、かき混ぜて鍋底に筋が立てば①のごまめを加え、焼き胡麻を手早くからめて出来上がり。
ごまめ
小型のカタクチイワシの素干し。御健在(ごまめ)の意にあてて縁起物として正月料理に用いられる。おもにあめ煮にするが,だしをとるのにも利用。田作(たづくり)とも呼ばれるがこれは昔イワシが肥料とされたためなどといわれる。

①Warm the frying pan, add 60 g of sesame seeds, roast slowly so as not to burn, and when it becomes hard, spread it on paper and let it cool.
②In a saucepan put 3 tablespoons of sugar, 3 tablespoons of soy sauce, and 1 tablespoon of sake, boil over low heat, stir, add the sesame seeds of① when the streak stands on the bottom of the pot, and quickly stir the baked sesame seeds and voila.
Sesame
Dried sardines of small shapes. It is used in New Year's cuisine as an auspicious event to signify the good (sesame). It is mainly used to boil candy, but it is also used to take broth. It is also called tazukuri, but it is said that this is because sardines were used as fertilizer in the past.
