いわしの蒲焼(2人分)
いわしは開いたのがスーパーで手に入る、ごみが出ないので手頃。
①いわし4匹の腸と腹側小骨・背骨を取り、手で開き綺麗に洗い、水であらい水を拭き、小麦粉大匙2を袋に入れて均一にまぶす。
②フライパンにサラダ油大匙1・いわしの皮を上にして中火で2~3分焼き、裏返し3分程焼き、油を拭き取る。
③②に醤油大匙2・みりん大匙2・酒大匙2を入れ、適当に煮詰める。
④皿に盛り付け、粉山椒・木の芽を天盛りして出来上がり。
*魚はうなぎ・さんま等。
*大匙1=15mℓ、小匙1=5mℓ、カップ1=200mℓ
*液体は一杯:1/2は7分目、粉体はすり切り:1/2は半分を減らす。
Sardine Kabayaki (for 2 people)
①Sardines are available at supermarkets and are affordable because there is no garbage.
⑴Take the intestines, abdominal bone, and spine of 4 sardines, open them by hand, wash them cleanly, wipe the dry water with water, put 2 large flour spoons in a bag and sprinkle uniformly.
(2) Put 1 tablespoon of salad oil on top in a frying pan and bake over medium heat for 2-3 minutes, turn over for about 3 minutes, and wipe off the oil.
(3) Put 2 tablespoons of soy sauce, 2 tablespoons of mirin, and 2 tablespoons of sake in (2) and simmer appropriately.
(4) Serve on a plate and make a tempura of powdered japanese pepper and wood buds.
*Fish is eel, sanma, etc.
* Liquid is full: 1/2 is 7 minutes, powder is sliced: 1/2 reduces half.
