豚の角煮ホロホロ煮
丁寧に仕上げる基本の豚の角煮です。豚肉を水煮をして、圧力鍋で煮る、とろとろに仕上がり、こってりした風味がごはんとの相性抜群。

①鍋に水適量・豚肉バラ300g3cm切り・長ねぎの青い部分1本・生姜20g細切りを入れて中火で熱し、沸騰したらアクを取り除き、蓋をして弱火で30分茹で、ザルに取り置く。
②鍋に煮汁水400mℓ・醤油60mℓ・酒50mℓ・②を入れて圧力鍋に入れ弱火で10分程煮る蓋を開けゆで卵を入れ、暫く煮て出来上がり。
