*菜の花のからし酢味噌
菜の花の収穫が始まりました、さっと茹で辛子酢味噌で和える。まだ春に遠いが春の味。
①摘みたての菜の花を、綺麗に洗い、すり鉢で細かくして、白味噌・酢・砂糖・からしを加えて出来上がり。
②茹でた筍や野菜類と和える。
*白味噌大匙3・みりん小匙1・薄口醤油小匙1/2・砂糖小匙1でも良い。
*酢を少々加えると緑が奇麗に保てる。
*しらすやイカなどを和えるのも良い。
