氷魚飯
氷魚は琵琶湖のアユの稚魚で、限られた時期(2月~3月)。川魚屋さんの店頭に出ている。食べ方は食塩水で茹でた釜上げ(二杯酢で食べる)、氷魚飯(ご飯に乗せ醤油をかけて食べる)。
①おおめの煮沸食塩水(1~3%)に洗った氷魚を30~40秒入れ、さっと引き上げる。
②熱いご飯に氷魚を乗せ醤油を少しかけ食べる。
Ice Fish Rice
Ice fish are fry of ayu from Lake Biwa, and are limited time (February to March). It is in the shop of the river fish shop. The way to eat is kamajo (eaten with two tablespoons of vinegar) boiled in saline, ice fish rice (put it on rice and eat it with soy sauce).
①Put the ice fish washed into the boiled salt water (1-3%) of the diaper for 30 to 40 seconds and quickly raise it.
②Put ice fish on hot rice and eat a little soy sauce.
