It's not a genuin Cajun cooking or Creole cooking. In the sauce, there is no pigment. It is incomplete Holy Trinity. But in Japan they think the Holy Trinity consists of tomato, onion and spices.
But this American-Japanese dish is delicious.

チャーシュー麺 nouille chinoise

I don't like narrow counter noodle and hot soupe places. I hate the mean calculation of the owner to get the most number of customers in the narrow space.
But this place is good. There is a enough space around the chair and table to enjoy their bowl and dish.
