It has been three years since I started growing watercress, which is used as an ingredient in Casey salad, a cornerstone of the Casey therapy.
Watercress seeds are sown in early summer from April to May and in September.
Although it's a week early, I sowed this year's fall seeds today, August 24th.
The seeds will sprout in about a week. Keep the planter dish filled with water until the seeds take root.
At night, they are taken to the barn to avoid being eaten by deer and wild boars.
