It was a little early, but I had Toshikoshi Soba for lunch.
Boiled raw soba with yam, topped with salmon kelp rolls, mekabu, and nameko mushrooms.
Last year, I spent New Year's Eve without preparing soba or zoni because I was undergoing fasting therapy for cataracts.
This year, I'm having a rich New Year's Eve with all the ingredients.
I am grateful for the protection and guidance that I have had to overcome over the long and thin years of this year.
