さて、このブログにも何度も書いているんですが、Hit-chan、一昨年かな？のクリスマスにAndyっちからホームベーカリーをもらってから、色々とパンを焼くようになりました。
As I've written about this several times here, I've been into baking bread for a year or so since Andy gave me a fancy bread maker a couple of Christmases ago.
最初は食パン、ハンバーガーバンズなどのシンプルなパンから始め、最近では少しずつ菓子パンのレパートリーも増えてきています。
I first started from baking something simple such as a loaf of white bread or hamburger buns, and then I've been learning more pastry-type bread one by one too.
我が家では、Andyっちがあまり甘い物を食べなかったり、めいも偏食家で菓子パン系は食べたり食べなかったりなので、頻繁に焼くのは食パンやディナーロール？などのシンプルなものが多いです。
In my family, Andy doesn't eat sweet stuff often and May-chan is a picky-eater too. She sometimes likes pastry-type bread but not always, so I tend to bake more simple kinds
like dinner rolls for my family.
ですが、最近は日本語学校でパンをもらってくれるお友達が増えて、菓子パンを作る機会も多くなっているので、Hit-chanの食べてもらいたい欲が良い感じで満たされております。
Still, now I have more friends at Japanese school and bake pastry-type bread frequently too, so thankfully that has satisfied my desire to make others happy with what I cook.
そんな中、先日、ママ友から「クリームパンは作れますか？」という嬉しいリクエストがありまして、作ろうかなぁとは思っていたものの、実際には作った事がなかったので、これは良い機会だと思って作ってみる事にしました。
The other day, one of my mom friends asked me, "By any chance, can you make Custard cream buns??" I actually had wanted to try to make them once before, but hadn't yet when I was asked, so I took it as a good timing to make them for the first time.
初めて作るものなので、お友達に食べてもらう前に何回か練習しました。
Again, I'd never baked them before, so I decided to do some experiments before I gave some out to my friends.

They turned out to be pretty good.

The filling was like this.
この時点でも十分に美味しいクリームパンだったんですが、もう少し上を目指したいと思い、引き続き実験をしていく事にしました。
I'd say that they're delicious enough at the point, but I kind of wanted to make them better and did a couple of more experiments after that.

ちなみにカスタードクリームは、最初、お菓子作りでいつも参考にさせてもらっている上の動画のレシピで作りました。
I first made the custard filling referred to the video above which I usually watch when I make cakes.
正直な事を言うと、Hit-chan、それ程カスタードクリームが好き～！っていう感じではなく、どんなカスタードクリームが美味しいのかイマイチ分かっていないので、カスタードクリームが好きというAndyっちにも味見してもらって感想を聞きました。
（Andyっち、甘いものが嫌いという訳ではなく、食べる頻度が少ないだけで、たまーに甘いドーナツとかも食べるよ。）
Honestly speaking, I'm not a huge fan of custard cream and don't know what is better or not, so I asked Andy to give me his honest opinion since he liked custard cream more than I did in general.
(He doesn't eat sweet stuff often, but it doesn't mean he doesn't like sweet things and he sometimes eat a donut or something.)
で、Hit-chanもちょっと思っていたんですが、上のレシピで作ったカスタードクリームだと味は美味しいんですが、クリームパンに入れるのには少しモタッとし過ぎているなぁという意見でした。
Anyways, Andy's feed back was actually same was what I felt too. The custard cream tasted delicious, but the texture was a little bit heavy and thick for the filling.
もしかすると、火を入れ過ぎたのかもと思い、その後2回程カスタードクリームを作ってみたんですが、どうも火の入れ方のせいではない模様。
I first thought that I had overcooked it and then tried to make just the custard cream twice after that, but I ended up reaching the conclusion which was not a matter of the cooking time.
なので、クリームパンとカスタードクリームについてもう一度ネットで調べてみたら、カスタードクリームを作る時に小麦粉で作る物とコーンスターチで作る物の2種類があると知りました。
So, I researched more about recipes for custard cream and then found out that there were briefly 2 ways to make it in general. One is made with flour and the other one is made with corn starch.
で、もう少し詳しく調べてみた結果、クリームパンに使うカスタードクリームは、小麦粉とコーンスターチを混ぜて作ってみると良さそうでした。
I also looked up more specifically about recipes for the bread filling and then thought that it'd be a good solution to use both flour and corn starch.
という事で、参考にさせていただいた動画のレシピの小麦粉の量の部分だけ変更して、オリジナルレシピの3分の2の量を小麦粉、残りの3分の1をコーンスターチに代えて作ってみたところ、大成功！モタっとし過ぎない、クリームパンに合う食感のカスタードクリームが完成しました。
So, I only changed the amount of flour in the recipe from the video above. Instead of using just flour, I mixed 2/3 of flour and 1/3 of corn starch together. Then, the cream texture turned out to be lighter and more suitable for the bread filling.
あと、生地の方も、最初はあんぱんを作る時と同じ生地で作っていて、それでも十分美味しかったんですが、もう少し柔らかい食感が続く生地を作ってみたいと思い、見つけたのが中種法というやり方。
I also tried something new for the dough recipe too. I first used the same recipe as the one for sweet red bean buns and it was already pretty good. Though, I still wanted to make a dough which could keep the bread soft for a longer time and found this method called "Sponge dough method".
今までは発酵の回数が2回のストレート法というやり方で焼いていたんですが、この中種法は発酵を3回させる方法で、時間はかかるけどよりしっとりもっちりとした生地になるという事でした。
I was baking all the bread in the method called "Straight dough method" which requires 2 fermentation processes, but sponge dough method requires 3 fermentation processes. Sponge dough method takes more time, of course, but can make softter and more moist bread.
この中種法では時間がかかるという部分が一番の難点だったんですが、これも、オーバーナイト法という、最初の発酵を冷蔵庫で一晩掛けて行うというやり方があると知り、この中種法＆オーバーナイト法の2つの方法を組み合わせて、比較的簡単にしっとりした生地を焼けるようになりました。
The drawback of sponge dough method is requiring a lot of time, but I also learned about "Overnight (proofing) method" and it can solve the problem in a way. I did overnight proofing for the first fermentation the night before I wanted to bake breads and then finished the rest of the process on the next day. Thanks to these 2 tips, I mastered to bake soft and moist bread.

数回の練習を経て、「あ、これならお友達にも食べてもらえるな！」というクオリティに行きつく事ができました。
After I practiced baking custard cream buns a couple of times, I finally reached the level that I could feel, "Okay, I think this is good enough to give out to my friends!"

中はこんな感じで、最初の頃に作ったものと比べるとクリームがより柔らかく、生地もしっとりしています。
The inside looked like this and you might be able to see the cream was lighter and the bread was softer compared to the ones that I baked for the first time.
めいも、食べてくれる時はペロッと1個食べてくれます。
May-chan loved and ate a whole one by herself at the time. (She doesn't always eat like that though.)
と、こんな感じで、非常にゆっくりなペースではありますが、一つずつ手作りできるパンのレパートリーが増えてきています。
Anyways, it's a slow pace, but I've been gradually adding more recipes in my baking repertoire.
