
I'm convinced that banana ricotta hotcakes are the perfect breakfast food. If I could eat them every morning I would but this wouldn't be practical or, for that matter, healthy. So I've regulated myself to enjoying them only on weekends.
The first time I tried ricotta hotcakes was at Sydney breakfast institution "Bills" run by celebrity chef Bill Granger. Bills' hotcakes are served with bananas and honeycomb butter -- they're wickedly rich and thick. I'd always order a plate of hotcakes with the full intention of demolishing them but inevitably, I'd always leave having eaten only half.
