先日Costcoでブルーベリーを買いました。Costcoで売っているものはどれも大量!
ブルーベリーも例外ではなく、かなりの量(500g位かしら?)入ってます。
生で食べるほかは冷凍しました。
今日はこのブルーベリーを使ってケーキを焼きました♪

Ingredients
100g polenta
200g self-raising flour
140g sugar
½ tsp baking powder
140g unsalted butter, softened
zest 1 orange, 2 tbsp orange juice (about ½ orange)
1 large egg
200g blueberries
Polentaは見たことがないのでコーングリッツを代用しました。(コーングリッツとコーンミールの違い:粒の大きさで呼び名が変わるんですね。(粗) コーングリッツ > コーンミール > コーンフラワー (細)ということのようです。)
self-raising flourは手に入りにくいので、200gの小麦粉に小さじ1.5杯のベーキングパウダーを加えました。
Heat oven to 160C/140C fan/gas 3. Line a 2lb loaf tin with baking parchment.
Put the polenta, flour, sugar, baking powder, butter and orange zest into a food processor and pulse until the mixture resembles breadcrumbs.
Combine the orange juice and egg together, then pour this into the dry ingredients and pulse until mixture forms a ball of dough.

Push half the dough into the lined tin

and scatter with half the blueberries.

Cover berries with the remaining dough and finish with remaining berries.

端っこを食べてみたら半生クッキーのようでした。(真ん中はちゃんとケーキ
コーングリッツのおかげ(って言うのか?)で小麦粉だけのケーキより歯ごたえがあります。
面白い食感です。 ちょっとパサパサ系ではありますが、これはこれでヨロシイと思います。 しっとり系にしたかったらアイスクリームを添えると良いでしょね、きっと。
今日になったら、生地がしっかりして昨日よりも一段と面白い食感です。
ポレンタは、イングリッシュマフィンにまぶしてある粉(のようなもの)ですが、その粒々感がこのケーキをクッキーに近い食感にしています。
中にはさんだ形のブルーベリーは酸味があるジャムのようで、上にのせたのは生の風味が残っています。
これ、すばらしく美味しいケーキなのかも

But not necessary, it is heavy and if you don't mind bringing heavy stuff, I can think of many other things

Yes, I remember that one! In fact I made one myself, though I couldn't find polenta, and didn't know what to use, so I used oatmeal, remember?
