Banana cake recipes

Brilliant banana loaf

Ingredients

140g butter
, softened, plus extra for the tin
140g caster sugar
2 large egg, beaten
140g self-raising flour

2 very ripe banana
, mashed
50g icing sugar
handful dried banana
chips, for decoration


Heat oven to 180C/160C fan/gas 4. Butter a 2lb loaf tin and line the base and sides with baking parchment.
Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour. Fold in the remaining flour, baking powder and bananas. Pour into the tin and bake for about 30 mins until a skewer comes out clean. Cool in the tin for 10 mins, then remove to a wire rack.
Mix the icing sugar with 2-3 tsp water to make a runny icing. Drizzle the icing across the top of the cake and decorate with banana chips


Banana & Walnut Bread

COOK TIME 1 hour
SERVES 8-10Serves 8-10

Preheat oven to 170°C or 150°C fan. Spray a 1 x 8cm x 19cm loaf tin with cooking oil spray.
Using electric beaters, beat margarine with Low GI sugar for 2 mins, until combined. Beat in egg. With a wooden spoon, stir in remaining ingredients and mix well to combine. Spoon into prepared loaf tin, sprinkle with extra sugar and extra walnuts. Bake for 1 hr, or until a skewer inserted in the centre comes out clean. Cool in the tin for 5 mins then turn out onto a wire rack. Slice and serve with yoghurt.

1/2 tsp Baking Powder
1/4 cup Chopped Walnuts, plus extra 1 tbsp
1 tbsp Low-fat Yoghurt, to serve
