帆立茶碗蒸し

年明けにアメリカからのお客さんを鳳凰軒に連れて行った時初めて食べました。

時々宴会に出てくるみたいだけど、今回は賄い(まかない)のために用意されたのをいただきました。

ワオ~~!!! 超バリウマ! 素晴らしい。 

こんな茶碗蒸しは初めて。なめらかさと塩味控え目、でも帆立の味がしみ込んだソース。

メニューに載っていないのが残ねん。


Hotate Chawanmushi (steamed egg custard dish with scallop sauce)

Chawanmushi is often served as an appetizer and often contains

chicken, ginko nuts, mushroom, or shrimp inside the dashi mixed egg custard.

Ohtoriken does not have chawanmushi on their menu but sometimes serves it as part of a set course.

Right after the new year, I took some friends from the US here

and they served us this large dish which was meant for the employees.

Unbelievable and fantastic!!! I have never had chawanmushi like this.

The tofu like creamy texture of the chawanmushi combined with the scallop sauce which was not too salty was superb.

Too bad this is not on their menu.
