切り裂きジャックの被害者については、8人や13人、20人とする説もあるが、確実に彼の犯行とされているのは以下の5名。
1888年8月31日（金） - メアリ・アン・ニコルズ（42歳）
1888年9月8日（土） - アーニー・チャップマン（47歳）子宮と膀胱を犯人により持ち去られる。
1888年9月30日（日）- エリザベス・ストライド（44歳）犯人が目撃されている唯一の事件。
1888年9月30日（日） - キャサリン・エドウッズ（43歳）左の腎臓と子宮を犯人に持ち去られる。
1888年11月9日（金）- メアリー・ジェイン・ケリー（25歳）皮膚や内臓を含めほぼ完全にバラバラという最も残忍な殺され方をした。
第一の手紙

警察は俺に目星をつけたようなことぬかしているが、奴らはまだ俺のことがわかっていない。・・・・・・・
・・・・・俺は、淫売女には恨みがあるんだ。まだまだ、切り裂くのはやめる気はねぇぜ。この手紙も殺した女の血で書くつもりだったが、あいにく取っといた血が全部固まっちまったので、使いもんになりゃしねぇ。赤インクで書くしかないってわけさ。今度は、女の耳を切り取って警察に送ることにするぜ。お楽しみにな。ha ha
Dear Boss,
I keep on hearing the police have caught me but they wont fix me just yet. I have laughed when they look so clever and talk about being on the right track. That joke about Leather Apron gave me real fits. I am down on whores and I shant quit ripping them till I do get buckled. Grand work the last job was. I gave the lady no time to squeal. How can they catch me now. I love my work and want to start again. You will soon hear of me with my funny little games. I saved some of the proper red stuff in a ginger beer bottle over the last job to write with but it went thick like glue and I cant use it. Red ink is fit enough I hope ha. ha. The next job I do I shall clip the ladys ears off and send to the police officers just for jolly wouldn't you. Keep this letter back till I do a bit more work, then give it out straight. My knife's so nice and sharp I want to get to work right away if I get a chance. Good Luck. Yours truly

・・・今度は二人殺した。最初の奴にはちと騒がれて思い通りにいかなかった。警察に送る耳を切り取る暇がなかったよ。この仕事が終るまで、前の手紙を取っておいてくれてありがとう。
