Banana, Walnut & Chia Bread
- 4 medium-sized super ripe bananas, roughly chopped
- 1 1/2 cups flour
- 1/2 cup extra virgin olive oil or coconut oil
- 1/2 cup brown sugar
- 1 teaspoon vanilla essence
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon chia seeds
- 1/2 cup walnuts, slightly crushed
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Pinch of sea salt
- Step 1Preheat the oven to 180°C.
- Step 2Grease a bread tin with a little bit of olive oil or coconut oil.
- Step 3Bring together the bananas and the sugar in a mixing bowl and mash them using a fork. Fold through the oil, vanilla essence, cinnamon, nutmeg and a pinch of sea salt.
- Step 4Sieve in the flour, baking powder, baking soda and fold thoroughly with a wooden spoon.
- Step 5Fold through the chia seeds and the crushed walnuts and pour the batter into the prepared bread tin.
- Step 6Cook the bread in the preheated oven for 35–40 minutes or until a small knife pulls clean when inserted into the centre of the bread.
- Step 7Once cooked remove from the oven and allow to cool almost completely in the tin before turning out.

おかげで?おいしかった~
*お砂糖ゼロ、Hubbyが買っていた甘いベリーヨーグルトを代わりにいれました(甘すぎたので早く終わらせたかった 笑)
*これに自分としては定番のクリスタルジンジャーを入れました
*バナナがおおすぎたせいか一向に焼けなかった。。。1時間以上焼いたのではないかな。
