




私の友人に日本食の大好きなアメリカ人がいます。時々商用でアメリカから福岡に来ます。滞在中は、朝、昼、夕食は必ず日本食を食べます。彼の好きな料理が塩焼きと煮付けです。Dietに良いと言いますが彼の体重は細身、良く分かりませんが、まあ日本食の好きな外国人は大好きですから、良しとしましょう。



会席はもともと、tea ceremony「お茶席」でもてなされる食事です。フランス料理のcourse dinnerの様に、ひとつのdish「料理」を食べ終えてから、次の料理が出てきます。
日本の魚料理と言うと、外国の人にはraw fish「刺身」と寿司が頭に浮かぶ様ですが、deep-fried fish「揚げ物」、simmeredfish「煮付け」、そしてsalted and broiled fish「塩焼き」も有ります。
最近はホテルの寿司カウンターでよく外国の方々を見かけます。アメリカは勿論ヨーロッパでも寿司は大流行しています。寿司はgrab a piece with your fingers「手でつまんで」、dip soy sauce on the topping 「ネタのほうに醤油を付けて」食べます。grated「すりおろした」わさびのeffect「効能」、take away the aftertaste「口直し」のためのpickled ginger「ガリ」の役割も説明出来るとばっちりです。
Japanese-Style Cooking
Kaiseki is a Japanese full-course dinner. The food is ( ① )in many small dishes on an idividual tray. It is usually for entertaining guests, especially at a tea ceremony.
Fish is easten in various ways in Japan. Sashimi, as you know, is eaten raw. Nitsuke is when you simmer fish with soy sauce, a sweet cooking rice wine called mirin, and ginger. You know tempua, which is deep-fried fish. We also eat shioyaki, a sated and ( ② ) fish.
If you need someone to teach you how to eat sushi, I'm your man! First of all, don't use ( ③ ), but grab a piece with your fingers. Turn it upside down, and slightly ( ④ ) the topping in soy sauce, but not the rice. The vinegared rice is a little warm, so it's good manners to eat a piece as soon as it's served, especially if the topping is raw. You also need wasabi, or grated green horseradish, between the topping and the rice. Wasabi not only has a good ( ⑤ ) but also kills bacteria, keeping the fish fresh. You should eat white meat and red meat fish in turns, and have some gari, or pickled ginger,especially after eating a piece of red meat, to take away the aftertaste.
