Peanut Butter Cookies (from my mom of course)
Ingredients:
½ c. butter or margarine
½ c. peanut butter
½ c. granulated sugar (white)
½ c. brown sugar (pack the sugar in measuring cup)
1 egg
1 ¼ c. all purpose flour (white)
½ tsp. baking powder
¾ tsp. baking soda
¼ tsp. salt
Directions:
1. Mix shortening (butter or margarine), sugars and egg thoroughly.
2. Blend all ingredients (flour, baking powder, baking soda and salt).
3. Stir dry ingredients into butter mixture (#1).
4. Chill dough (couple of hours). You can also mix night before and chill. I have been know to mix one day ad baked two or three days later. No problem with this.
5. When ready to bake, heat oven 350 degrees – 375 degrees (depending on
oven temperature).
6. Roll dough in 1” – 1 ¼” balls. Place about 3” apart on lightly greased baking sheet. Flatten crisscross style with fork dipped in flour.
**You can make smaller balls if you like. I vary and flatten so that dough is pretty thin to get crispy cookies. You have to watch the baking to see what works for you.
7. Bake 10 – 12 minutes. Time depends on your oven.
8. Makes about 25 large cookies, depending on size of balls.
ENJOY!!!!!
