Yamahai No.2 (Batch No.9)

Following hot on the heels of batch No.8 comes No.9.

Tamagawa sake is hand made with fine rice and water bubbling from the mountain behind the brewery. For the Spontaneous Fermentation products, this is done by the agency of microorganisms living in the brewery. As a natural rather than industrial product, we find that, even though we may brew successive batches (like 8 and 9) with the same rice and the same water in adjacent tanks, there are subtle differences in the aroma and flavour of each batch. For “3U” limited editions, the batch no. is on the back label (23BY 込8号for batch no. 8 this season (Brewing Year 23), for example).

Our customers enjoy the differences between batches, and follow the development as batch after batch appears as a limited edition throughout the season.

Compared to its predecessor, batch No.9 has come with still more potency, with alcohol heading for 21%. Great now if you like something with punch, though it will settle and soften if you have the patience to age it.
